Mediterranean Chicken Salad Recipe

This Mediterranean style salad is prepared using chicken breast chickpeas, black olives, bell pepper, lettuce, feta cheese, cucumber, red onion, and tomatoes. Chicken breasts are to be sauteed before adding to the salad. It is made with virgin olive oil and lemon juice dressing, which gives a tangy flavour to the salad. Ingredients of Mediterranean Chicken Salad

  • 500 gm chicken breasts
  • 1 cup soaked overnight chickpeas
  • 1 small diced yellow bell pepper
  • 1/2 cup cheese- feta
  • 2 teaspoon lemon juice
  • lettuce leaf as required
  • salt as required
  • 3 tablespoon extra virgin olive oil
  • 1 handful black olives
  • 1 chopped tomato
  • 3 pinches black pepper
  • 1 medium sliced red onion
  • 1 small diced cucumber

How to make Mediterranean Chicken Salad

Step 1 Wash the chickenBegin with washing the chicken breast, drain the excess water. Moving on, to prepare this delicious salad, heat oil in a non-stick pan over medium flame and saute chicken breast in it. Flip it and cook from both the sides. Once the chicken gets a little charred, turn off the flame and keep it aside.

Step 2 Saute vegetables and chickpeasNext, put a pan over medium flame and add olive oil in it. When the oil is hot enough, add the soaked chickpeas, tomato, diced bell pepper, and black olives. Sprinkle salt and pepper powder as per your taste.

Step 3 Toss all the ingredientsWhen the chicken is warm enough to handle, cut into pieces in a large bowl. Add the sauteed veggies to it, along with feta cheese, sliced red onion, diced cucumber, torn lettuce leaf, and virgin olive oil. Toss well and drizzle lemon juice and serve fresh.

Tips
  1. To make the chicken more delicious, marinate the chicken breasts with herbs and spices.
